How was it last month? It’s almost July and it will officially start becoming hot. This is a time in Japan where the rainy season “tsuyu” ends, and it instead starts becoming rapidly hotter. We usually think of beer when it’s hot, but why not use this opportunity to try Japanese sake? We will go ahead and introduce sake and snacks this month as well!

Saketalk will start selling Japanese sake on a monthly basis this year. We will hand select 3 to 4 types of Japanese sake, snacks, and sake vessels every month, so you can purchase any and as many favorite combinations as you like! Until now, we had been selling sake vessels and introducing sake and vessels separately, but our challenge this year is to try doing it together! We’d like to introduce sake that matches the season such as new sake for winter, summer sake for summer, hiyaoroshi for autumn,etc., and different types of sake from the same brewery such as rice ginjyo and honjozo.

First up is this sake.Made using sake brewer rice Koji and Yamada Nishiki (Hyogo Prefecture), as well as Gohyakumangoku (Shimane Prefecture). A bright scent and aftertaste with a refreshing aroma. This flavor which you won’t get tired of is the representative sake of Tosa’s pale dry. It’s the Kinou Tsukasabotan from the Tsukasabotan brewery. According to “Okimisan and Tsukasabotan” by Tomiko Miyao, the author of “Zo” – “This is not just a tsukasanobotan. It is a golden phoenix’s tsukasanobotan!” It is said to be a sake of “comfort” that has been enjoyed from generation to generation. It is very easy to drink but also has a unique characteristic as it is a local sake, and has a perfect balance of flavors that make it recommendable for even women that aren’t good with sake.

There is a whale printed on the label, just as the name would suggest. In order to bring out the goodness of the material, the milling ratio was brought up to 55%. The raw material rice has different characteristics depending on the area of production and product variety. We carefully identify these characteristics and performed preparation and mash management. A strong malt is used and the sake is made at a low temperature with Kumamoto Yeast and the headwater of Kagami River. After squeezing, it is stored in a low temperature tank and bottled in time according to the shipping volume. Therefore the level and quality of the flavor is top-notch.

A junmai sake that has brought out the umami and sweetness of the rice. This brand was named with the hopes that it would “represent the heart of Tama, be a source of pride for Tama, and fulfill the hearts of many”. In Tokyo the word “jizake” has a connotation of being a local sake of the countryside. However, although it does not receive much recognition, Tokyo’s sake is also very good.
If you drink it cold then you won’t notice the sourness much, which could reduce its appeal in half. Any drinking it too hot will cause some of the flavor to disappear. Therefore the best temperature range is room temperature to lukewarm. It is not an exaggeration to say that this could be the representative sake of Tokyo that could be found for under 2,000 yen.

In Japan, there is a scene in which people cross sakazukis (sake cups) with each other when they sign a contract. directly into sake the taste of sake will be thinned out, and this hole avoids
this when cooling sake. The mouth of the vessel is also thin so the texture and
sensation of sipping on sake will be enhanced.
